Skin Removal

2, When pulling to the tail, slow down and use a knife to peel off the base of the cow's tail.
3, During the peeling process, use a cutting tool to assist in separating the adhesive areas between the skin and fat, as well as between the skin and meat.
4, When pulling to the waist, increase the speed appropriately.
5, When pulling to the head, use a knife to peel off the parts that are not easy to pull apart.
6, After separation, there is no fat or meat on the skin, and the skin is not damaged.
7, Number the torn cowhide and place it in the designated location.

Head Cutting
1, Head cutting can also be performed before skin removal.
2, Cut off the cow's head from the front of the first joint of the cervical spine, remove the thyroid gland near the larynx, and place it in a dedicated collection container.
3, The removed cow head should be hung on a synchronous inspection hook or a dedicated inspection tray.
4, When using a cutting device to remove the head, an 82 ℃ hot water disinfection device should be installed, disinfection performed once finished one cattle.
