Tail cutting
1, Cut off the tail of the bull along the joint of the tail root, remove the male genitalia, number it, and place it in a designated container.

Split Half
1, Insert the split saw between the two hind legs of the cow, and cut the cow's body into two halves from top to bottom along the midline of the cow's spine at a constant speed from the pubic connection.
2, During the sawing (splitting) process, clean water should be continuously sprayed. It is not advisable to cut diagonally or off center, and the saw (cut) section should be neat to avoid damaging the cow carcass.
Body trimming
1, Remove the residual fat from the spinal cord and lumen and place it in a designated container.
2, Remove any bruises, residual thyroid, adrenal glands, diseased lymph nodes, dirt, and floating hair on the surface of the body, while maintaining the integrity of the muscle membrane and the body.
