Pig slaughtering process steps

  

The process steps of pig slaughtering mainly include: pre-treatment and rest, stunning, stabbing and bleeding, skinning (scalding and removing hair), hanging and lifting, pre-drying, scalding the hair, cleaning and polishing, removing the tail, head and hooves, carving the ears, opening the cavity, inspection and quarantine, splitting in half (sawing in half), repair, measurement and quality division, sorting out by-products, cooling, freezing, packaging, labeling, marking and storage, etc.

The process of pig slaughtering has time requirements. For example, pigs to be slaughtered should stop eating and rest for no less than 12 hours before the time of slaughter, and water feeding should be stopped 3 hours before slaughter; the bleeding time should be no less than 5 minutes; from bleeding to removing the internal organs should not exceed 30 minutes; from bleeding to pre-cooling should not exceed 45 minutes.
